Fall is officially here

I love this time of year when the mornings require a sweater and the hot afternoon sun doesn’t reach into the shade. The Grand Lake Farmers Market was hoppin’ today. We had lots of beautiful lettuce and greens and this was the first week for peas. We heard over and over about how folks want shelling peas. Luckily we brought a few flats. Roasted Tomatoes

If your house looks anything like ours, there are boxes of newly harvested tomatoes arriving everyday! Every inch of countertop is covered. To remedy this we are roasting batches daily to preserve the bounty for colder months. This recipe was popular last year so I’m re-posting it to help you manage the abundance . . .
